I want to share with you recipe of oatmeal cookies that I use frequently. The good thing about this cookies – they contain no oil, no sugar, and no any other sweeteners like syrup. Just natural whole-foods. That’s make this cookies harmless, if not healthy. I you have no occasion for sweets, just not to consume sugar every day, but to be able to enjoy dessert with cup of tea – this is a nice option.
Oats 1 cup
Oatmeal flour 1 cup
Cinnamon 2 tsp.
Walnuts 50 g.
Raisins 0,5 cup
Apple 1 pc.
Banana 1 pc.
Water 1/4 cup
Baking soda 1 tsp.
Lemon juice 2tbsp
How to make Oatmeal Cookies
If you don’t have oatmeal flour you can make it yourself with help of a blender. Just grind one cup of oats – that’s what I do. Or if you don’t have blender either, you can use any other flour for this recipe as well. But if it is essential for you to make cookies gluten-free, than you can also use just 2 cups of oats for this recipe, but in this case, let the batter to sit a bit longer, after you will mix all the ingredients.
Mix all dry ingredients in the bowl first: oats, oatmeal flour, cinnamon, chopped walnuts, raisins, peeled and diced apple.
Then puree banana with a fork in another bowl, add water and soda with lemon juice. You gonna see a chemical reaction. Once it’s completed – add all wet ingredients to dry ingredients and mix.
Once the batter is ready, preheat the oven (180 ‘C). Use a spoon to form and place your cookies to the baking sheet with baking paper on it. Then let them bake for 15 min.
Done! Nice, soft, naturally sweet cookies! Make a cut of tea, (with almond milk if you like) and enjoy!
