There are many vegan recipes that are ridiculously easy. For example this lentil soup. I call it “unwed men’s soup” 😀 , because my hubby invented this recipe while I was away travailing.
This tasty soup contains no oil, it is high in protein and it is super easy: it is cookes in one pot and takes 30 min (not more).
Water 2 l
Lentils (brown/green) 1 cup
Sweet potato 1 pc
Celery (leaves) 2 handfuls
Tomato 1 pc (opt)
Spices of choice (opt)
How to make Super Easy Vegan Lentil Soup
Rinse your lentils. Bring lentils to boil in 2 litres of water. Cook for 10 min and add diced sweet potato. I like large cubes of sweet potato in soup. And recently we read, that skins of sweet potato contain even more good nutrients and antioxidants then sweet potato itself. So, I don’t peel sweet potato anymore. This makes cooking process even easier!
So let your lentils cook with sweet potato for a while, then add celery and spices (I don’t add anything, but cumin seeds, curry powder, coriander are nice choice here, if you want more flavours). Sometimes I also add one chopped tomato at this point, it is optional 🙂
That’s it! Cook the soup until lentils and sweet potato become soft and ready, and serve soup with any greens you like: spring onions, parsley or dill.
