Pitta Bread

What I don’t like about pitta they sell in a food-store – it always contains yeast. I can’t get it! Why you need to add yeas in a flat bread?!
Sometimes I feel enough enthusiasm to make pitta at home. Basically, you need just tree ingredients to make it. And you need a pan – that’s it. I have a nice cast iron frying pan – it allows me to create a oven-effect under the lid.

Ingredients:

Wholewheat flour 1 cup
Baking soda 0,5 tsp
Hot water 0,5-0,7 cup
Olive oil 1 tbsp (optional)
Salt (optional)

How to make home-made Pitta Bread

Step1. Boil 1 cup of water. Pour 1 cup of flour into a bowl, add baking soda (salt and oil are optional), mix thoroughly and slowly mix in the hot water to it, using a spoon. When the temperature will be tolerable, continue mixing your dough with your hands.

The amount of water depends on the type of flour you are using. Whole wheat flour usually requires more water. Maybe you will need a full cup of water or slightly less. However, I advise you to start with a smaller amount and continue adding water gradually. You need soft and a bit sticky consistency of the dough. Adding oil will make the dough a bit more elastic.

Step 2. Divide the dough into 6 equal pieces and roll them out one by one (⌀18-20 cm) placing them immediately to the preheated pan (with a lid on). Avoid letting the dough dry out by covering it with a towel (or plastic bag).

Step 3. Fry (or better to say – bake) each flat bread for 3-5 min on each side on the low to medium heat. Or longer! In case you want a darker colour. Once pitta is ready – wrap it in the clean kitchen towel. Otherwise it will get dry and brittle.

Enjoy this pitta bread with hummus, or wrap falafel in it!
