Falafel Wrap

I think we found the best recipe for falafel. Lisa (“Downshiftology” YouTube channel author, and author of this recipe) claims that she was developing this recipe for some time, testing and testing…  And I think she developed a great recipe. My hubby made great falafels following all exact proportions of this recipe.

As you probably know, there are thousands of different ways to make falafel, however not all of them are good for baking. I don’t want to advertise too much (this all is not sponsored at all) but this recipe is definitely an exception.

It is very handy to have such falafels frozen in the freezer, and once you are planning a trip – just move as many as you need to the fridge the day before, and all you have to do in the morning – gather together all ingredients and go!

This time we planned to go for trail running in Troodos. I woke up at 6 and I made pitas using 4 ingredients:

  • Whole Wheat Flour 1 cup
  • Salt pinch
  • Soda pinch
  • Hot water (as needed)

It is difficult to say exact proportions, because different flour requires different amounts of water. I used about 1/3 cup of boiling water. The dough needs to be soft and a bit sticky.

So I rolled out 4 pitas and baked them on the medium heat on the skillet.

The souse is a blended mix of:

  • Avocado 1pc.
  • Lemon juice 2 tbsp.
  • Salt (pinch)
  • Garlic (1 clove).

Then I added fresh veggies:

  • Red cabbage
  • Onions,
  • Tomatoes
  • Cucumbers
  • Lettuce
  • Chilli pepper
  • Red bell pepper
  • pickles

And at 8 o’clock we were ready to go!

I also had two pitas bought from the store, however this was too much for us, as we realized at our picnic point :D. We were missing two friend)
